Tangy Healthful Asian Beef Wraps

Tasty healthful wraps with a teriyaki-fresh bite. Make as a light dinner or snack or prepare ahead to take for lunch or a picnic.

INGREDIENTS

650g beef schnitzel or tenderized round steak
½ cup teriyaki sauce
1 small packet salad mix, rinsed & dry
2½ cups rocket, rinsed & dry
½ bunch leaves of coriander, rinsed and patted dry
Asian Dressing from local supermarket or your own
2½ tablespoons canola oil
2 limes cut into 10 wedges

1 pack of Go No Gluten Wraps Large (for wheat-free, gluten-free option)
or
1 pack of Go Low Carb Wraps (for low-carb option)

DIRECTIONS

Serves 6

Prep time: 20 mins. Allow 20 minutes marinade time for the beef.
Cooking time: 5 mins

Marinate beef in teriyaki sauce for 20 mins.

Grill beef quickly over a high heat on a lightly oiled non-stick bbq or skillet. Slice cooked beef with the grain into 1cm-wide strips

Brush a Go No Gluten Wrap with a little water and heat in your sandwich press until soft and bendy (about 7 secs). Go Low Carb Wraps don’t need heating first as they will be soft enough cold.

While still warm; in the centre of each, place a small amount of rocket, salad mix, coriander and teriyaki beef. Drizzle 1-2 teaspoons of dressing & finish with a squeeze of lime.

Wrap in airtight packaging and take as a moreish lunch, snack or picnic.
