Lance’s Bacon & Spinach Savouries

Lance loves these gluten-free treats which are as tasty as your regular savouries but much better for you.

The savouries casings can be made ahead of time and stored in airtight container for up to a week & are perfect for kids’ and grown ups’ lunchboxes.

INGREDIENTS

2 spring onions, chopped
75 gm rindless bacon or shaved ham
50 gm fresh baby spinach leaves, roughly chopped
6 eggs
1 cup milk
¼ cup grated cheese
2 tablespoons parmesan cheese
Salt and pepper to taste

2 packs of Corn Star (for wheat-free, gluten-free option)
or
2 packs of Go No Gluten Wraps Large (for wheat-free, gluten-free option using round-shaped cookie cutters for pie casings)
or
2 packs of Go Low Carb Wraps(for low-carb option using round-shaped cookie cutters for pie casings)

Extras
round-shaped cookie cutters
12 x patty pan tin or mini muffin tray
oil spray

DIRECTIONS

Makes 24 savouries

Prep time: 15 minutes
Cooking time: 15 minutes

The savouries casings can be made ahead of time and stored in airtight container for up to a week.

Heat oven to 160-170C.

Cook bacon 1-2 minutes, add spring onions and cook for an additional minute, then add spinach until wilted, mix though and set aside.

Brush Corn Stars with a little water and heat each one in your sandwich press until soft and pliable (about 7 secs). If using Go No Gluten Wraps or Go Low Carb Wraps, use a round-shaped cookie cutter to press out your cases. Go No Gluten Wraps should also be heated first in the sandwich press after the cases have been pressed out to make soft & bendy.

While still hot from the sandwich press, gently push each Corn Star or Go No Gluten wrap into a patty pan tin. The casings will harden as they cool. If your casings are made of Go Low Carb Wraps; don’t worry about heating them first as they will be soft enough to press in.

Whisk eggs, milk, salt, pepper & parmesan and combine bacon mixture before spooning into each tortilla cup.

Bake until egg mixture rises and is golden in colour (10-15 minutes).

Cool and send to school in the sandwich boxes (3 should fit nicely). Store extras in fridge for after-school snacks or a light tea!
